What you need:
- 2 cups chopped cooked vegetables (I used mushrooms, onion and asparagus)
- 1 cup chopped ham
- 6 eggs, beaten
- 3 cups shredded cheese (I used sharp cheddar)
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
Preheat oven to 350 degrees. Lightly grease a pie pan. (Mr.Perfect's grandma gave me this vintage Cheese Cake Pie Baker. I love it! )
In a large bowl combine all ingredients, mix well.
Pour egg mixture into pie pan.
Bake in oven until eggs have set, about 30-35 minutes. Let cool for 10 minutes before serving.
Dig in, you won't miss the crust at all!

ReplyDeleteA very healthy wonderful recipe indeed! I tried an eggless recipe and my family and I are going back and forth between calling it a sheperd's pie or a quiche - hope I can decide soon so that I can blog it ;)
