It's still strawberry week!
Tonight we're having a strawberry salad with dinner. The poppy seed dressing is wonderful. I love poppies & their little seeds! I found this recipe a few years ago when I had 5,000,000 berries. I adapted it a bit to fit my family's tastes and preferences. (I like tasting food and Mr.Perfect prefers his salad to not be sweet)What you need:
- 4 cups of lettuce or spinach (I used a combination of mixed spring greens and baby spinach)
- 1 cup sliced strawberries
- 1/4 cup thinly sliced onion
- 1/4 cup mayonnaise
- 1 tablespoon sugar
- 1/8 cup milk
- 1 tablespoon apple cider vinegar
- 1 tablespoon poppy seeds
To make dressing, whisk together mayo, sugar, milk, vinegar and poppy seeds.
Pour dressing over salad and serve immediately.
Enjoy!
