I'm not a big fan of fish. My dad traumatized me with a scary fish bone story as a child. Mr.Perfect, on the other hand, loves fish. Whenever I don't know what to make for dinner and I want to butter up Mr.Perfect I make this very easy and healthy Parmesan tilapia.
What you need:
- 2-3 tilapia fillets, rinsed and dried
- 2 tablespoons lemon juice
- 1/4 cup crushed cracker crumbs (I used Ritz crackers)
- 1/4 cup Parmesan cheese
What you do:
Pour lemon juice in a bowl. Combine cracker crumbs and Parmesan cheese in a different bowl. (I set this up assembly line style)
Place a fillet in the lemon juice.
Dredge the fillet in the Parmesan mixture patting it all over to coat.
Place in an oiled baking dish and repeat with the remaining fillets.
Bake at 425ºF for about 15 minutes or until they flake with a fork.
Enjoy! Just don't say anything about fish bones to me... please!
