Mini Meatloaves

Meet mini meatloaves. These little guys are so versatile. They can be made with a Mexican, Italian or BBQ flair (the sky is the limit). I also love these because they are covered in cheese... Trouble will eat anything covered in cheese and so will I.
What you need:
  • 1 lb. ground beef
  • 1 cup dry bread cubes (I used a sprouted wheat bread in an attempt to be healthy)
  • 1/2 cup water
  • 1/2 teaspoon Italian seasoning (any seasoning will do, chili powder, garlic powder, taco seasoning...)
  • 1/2 cup pasta sauce (any sauce will do, salsa, bbq sauce, green chilis...)
  • 1/2 cup mozzarella cheese (any cheese will do, jack, feta, cheddar, American)

What you do:

Mix beef with bread, water and seasoning.

Press meat mixture into about 8 greased muffin tins. Make a small indentation on the top of each meatloaf.


Fill the indentation with sauce.

Bake for 30 minutes at 375 degrees. Top with cheese, let stand for 10 minutes before serving.

They're like meat cupcakes.. only mini meatloaves sounds so much better!
