Cilantro Lime Vinaigrette

When your garden gives you lettuce... make salad dressing. That's right, I've got a ton of lettuce. Having the same old salad dressing from a bottle every day just doesn't cut it. Today I'm using one of my favorite combinations, cilantro and lime, to make a vinaigrette.
What you need:
  • 1 jalapeno pepper, seeded (leave some seeds if you like it hot)
  • 1 clove garlic
  • zest from one lime
  • juice from one lime
  • 1/3 cup cilantro leaves
  • 1/4 cup olive oil 
  • 1 tablespoon apple cider vinegar
  • salt and pepper to taste
What you do:
Toss all ingredients in the blender and pulse until desired consistency.

Enjoy on your salad!
 This dressing was perfect on a grilled steak salad with feta, avocado, garden tomatoes and lots of lettuce.
