Pineapple Cupcakes

I've been thinking about summer vacations lately and that quickly brought me to pineapple... and somehow I got my brain set on pineapple cupcakes. Everything always comes back to food. This recipe makes 12 cupcakes. 

What you need:
  • 1 cup white sugar
  • 1/2 cup butter
  • 2 tablespoons pureed fresh pineapple (I pulsed it in the blender.)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1  1/2 cups all-purpose flour
  • 1  3/4 teaspoons baking powder
  • 1/4 cup milk
  • 1/4 cup chopped fresh pineapple
What you do:
Preheat oven to 350 degrees. In a bowl, cream together butter and sugar. Beat the butter until it's fluffy (5-8 minutes).

Beat in pureed pineapple.

Beat in eggs, one at a time.

Stir in the vanilla.

Combine flour and baking powder, fold into the wet mixture and mix until just combined. Do not to beat the flour!

Stir in the milk and chopped pineapple.

Spoon batter into lined muffin pan. Bake for 20 to 25 minutes.

Cool completely before frosting.

Pineapple Frosting
What you need:
  • 1/2 cup butter, softened 
  • 2 cups powdered sugar 
  • 1/4 cup pureed fresh pineapple
  • 1/2 teaspoon vanilla extract
What you do:
Beat butter and sugar until well combined. Add pineapple and vanilla, continue to beat until creamy.

Top cupcakes with icing.

  1. Yay...glad you put this recipe up. I just LOVE pineapple!! The pics should carry a warning though....may cause severe drooling lol.
