Pumpkin Ice Cream

Trouble eating his first Pumpkin Ice Cream
When trouble was about 3 years old we went to a pumpkin patch out in the country. They had hay rides, scarecrows, face-painting and best of all pumpkin ice cream. We were smitten and every year right before Halloween I make a batch of yummy pumpkin ice cream. It puts us in a festive fall mood... even if it is 90 degrees outside.
What you need:
  • 2 eggs
  • 3/4 cup sugar
  • 2 cups heavy whipping cream
  • 1/2 cup milk
  • 1 tablespoon vanilla
  • 1 cup pumpkin
  • 1 teaspoon cinnamon
  • pinch nutmeg
  • 1/4 cup chopped walnuts or pecans (optional)
What you do:
Beat eggs for two minutes.

Add sugar to eggs and beat for an additional minute.

Slowly add cream, milk and vanilla to mixture.

Transfer the mixture to an ice cream maker and freeze following manufacturer’s instructions.

Add cinnamon and nutmeg to pumpkin and mix well. Set mixture in freezer until needed. (Place nuts in the freezer too.)

After the ice cream stiffens, add the pumpkin & nuts. Let it mix in the ice cream maker for a few minutes.

Put all this yummy goodness in a freezer safe container.
Ice cream is happiness condensed.

Sight Word Candy Land

Because I've been substitute teaching in the Reading Lab at Trouble's school I've been looking for fun reading games on Pinterest and happened across this 'sweet' idea from First Grader... at last.
I pulled out Trouble's old Candy Land board game and wrote sight words on the game cards. To play the kids must read the sight word correctly to move their game piece. If they draw a card that moves them backward they must read the card correctly to avoid having to move backwards.
The kids loved this version of Candy Land!

Baba Ghanoush (Eggplant Dip)

I thought you might like to see Bread Lady (on the left). Here she is with my mom, Nana (on the right). What fun, sweet and beautiful ladies... oh and they both LOVE to talk... and I love to listen.
She recently showed us how she makes baba ghanoush, eggplant dip. In Lebanon, baba ghanoush is served as an appetizer. Bread lady serves her dip with toasted pita chips (I'll show you her easy trick for semi-homemade pita chips).

What you need:
  • 1 eggplant, pierced and roasted on a grill (a jar of roasted eggplant works as well)
  • 1 clove garlic, pressed
  • 1/2 teaspoon salt or to taste
  • juice of 1 lemon or to taste
  • 1/4 cup tahini 
What you do:
I had Mr.Perfect throw this eggplant on the grill while he was cooking steaks. He didn't do much to it, just turned it a few times and left it there for about 45 minutes.
Once the eggplant is roasted and cooked through, peel the skin off and dump the eggplant innards in a bowl and mash the eggplant with a fork.


Add remaining ingredients to the eggplant and mix well.

Serve with pita chips, crackers, veggies or grab a spoon and dig in.  Bread Lady says to drizzle a little olive oil over the dip and sprinkle a little paprika before serving...I never got that far.

To make pita chips, cut triangles of store bought pita bread.

Brush a little olive oil over each piece of pita.

Sprinkle with a little kosher salt and bake in a 400 degree oven until the pita chips are slightly toasted.

Homemade Bisquick

I'm making chicken pot pies today and my favorite recipe requires Bisquick (biscuit baking mix). Only problem is... I don't have any. So today I'm making my own biscuit baking mix.

What you need:
  • 4 cups flour
  • 3/4 cup powdered milk
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 3/4 cup butter
What you do:
Combine first 4 ingredients in a bowl.

Cut the butter into the flour with a pastry blender or fork. The mixture should look like crumbs.

Use as you would Bisquick or biscuit baking mix. Store in the refrigerator or freezer.










I love that this doesn't have the preservatives you'd find in the boxed stuff!

Passion Iced Tea

I love iced tea and I adore Starbuck's Passion Iced Tea. It's a hibiscus herbal tea that's a tropical vacation in a cup. I treat myself to one every now and again when I'm in town. But when I'm at home and craving a Passion Iced Tea I simply make my own (it's way cheaper too).
What you need:
  • 1 Tazo Passion Tea bag (found at most grocery stores)
  • 1 cup water
  • ice

What you do:
Microwave one cup of water for 2-3 minutes.

Add the tea bag to the very hot water and close the microwave door. Let the tea bag steep for 10 minutes.

Remove the tea bag.

Pour tea into a glass filled with ice. (I'm reusing my cup from earlier in the day in an attempt to make myself feel like I went to Starbucks again.)

Done!
I think this tea is awesome on its own but if you like your tea sweet add a little of your favorite sweetener.
