Italian Meatloaf

Mr.Perfect loves meatloaf... the food not the musician. It's definitely comfort food for me and I'm all about comfort food.
What you need:
  • 1 pound ground beef (I used ground sirloin)
  • 1/4 cup chopped celery, sauteed
  • 1/4 cup chopped onion, sauteed
  • 2 cloves finely chopped garlic
  • 2 eggs
  • 3/4 cup oatmeal (I used old fashioned)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Italian seasoning
  • salt and pepper to taste
  • 1 cup marinara sauce
Preheat oven to 350 degrees F.
Combine all of the ingredients except for the marinara.

Pack the meat mixture into a greased loaf pan.

Top the meat with marinara. Bake for 50 to 60 minutes.

Remove from the oven and let rest for 5 minutes before slicing.
I notice that meatloaf isn't the most
  photogenic food out there.

  1. Will definitely have to try this recipe. Sounds like a nice mix of things. Hubby loves comfort food! Do you do traditional sides with this version or something Italian? BTW- I made your tilapia parmesean two nights ago. Came out good. I did have a little trouble getting the crumbs mixture to stick to the fish, but I just sprinkled more on before putting the fillets in the oven. Thanks again for that "easy peasy" dinner night!
