Strawberry Ice Cream

It's the last day of strawberry week... at least until I make another visit to Sweet Berry Farm.
The weather in Texas is getting warmer and summer will be here any day... probably tomorrow (we'll have a high of 94). All desserts that cool me off and don't require turning on the oven are golden. This recipe for strawberry ice cream is based on the recipe I use to make most of my ice creams. It's delicious!

What you need:
  • 1  1/2 cup chopped strawberries
  • 1/4 cup sugar
  • 2 eggs
  • 1/2 cup sugar
  • 2 cups heavy cream or whipping cream
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
What you do:
Mix chopped strawberries with 1/4 cup sugar in a bowl and put in refrigerator overnight. (They'll get nice and syrupy.)

Using a mixer, mix the eggs in a bowl until light. (about 2 minutes)

Mix in 1/2 cup sugar, a little at a time, then continue mixing until blended, about 1 minute more. (It should look thicker now.)

Pour the cream, milk and vanilla into egg mixture and mix until well combined.

Add just the juice from the strawberries to mixture and blend. (Put the chopped strawberries in the freezer while the ice cream is churning.)

Transfer the mixture to an ice cream maker and freeze following manufacturer’s instructions.

After the ice cream stiffens, add the chopped strawberries and let it mix in the ice cream maker for a minute.

Put all this yummy goodness in a freezer safe container. Store in the freezer to harden up.

Ice cream is happiness condensed.

As soon as Trouble hears the ice cream maker start churning he becomes the best child on the planet and sweetly asks if I need anyone to 'sample' the ice cream.

  11. Thank you for sharing this with Dr. Laura's Tasty Tuesday! I'm featuring you this week, and this recipe. It's almost enough to make me want to go out and get an ice cream maker. And, since I am currently in the middle of becoming minimalist, that really says something! HA!
