Whoopie Pies


I found myself in need of a dessert and I only had one egg and a splash of milk left in the house. Don't worry I've got lots of butter, sugar and a jar of marshmallow fluff. Searching through an old recipe book I saw a recipe for whoopie pies that I thought I could adapt to fit my limited supplies.

What you need:
  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup room temperature butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt
  • 1/2 cup hot coffee
What you do:
Preheat oven to 350 degrees. In a bowl, sift together flour, cocoa, baking soda and salt. Set aside.

In a bowl beat sugar and butter until fluffy.

Beat in the egg and vanilla.

Add half of the flour mixture, half of the yogurt and half of the coffee. Beat until well combined. Repeat, beating in the remaining flour, yogurt and coffee.

The batter will look like chocolate mousse (and tastes like it too).

Using an ice cream scoop, drop batter onto a greased baking sheet about 2 inches apart.

Bake for about 8 minutes, until the tops appear dry.

Allow cookies to cool on paper towels or a wire rack.


Filling
What you need:
  • 1/2 cup room temperature butter
  • 1  1/2 cups powdered sugar
  • 6 tablespoons marshmallow fluff
  • 1 teaspoon milk
  • 1 teaspoon vanilla extract
  • pinch of salt
What you do:
Beat all filling ingredients in a bowl.

(To make a mint filling add 1/4 teaspoon mint extract and 2-3 drops of green food coloring.)

Spread filling on bottom of a cookie and sandwich with another cookie.

Oh my!
