Bestie's Favorite Cupcake

Today is my Bestie's birthday and I'm making her favorite cupcakes.  There are three components to these: chocolate cake, vanilla filling and chocolate buttercream icing. If you are on any kind of diet don't even read this recipe... you'll lose you're mind!

Chocolate Cake
What you need:
  • 1 box chocolate cake mix
  • 1 pkg chocolate pudding mix (3.9 oz.)
  • 1/2 cup water (warm)
  • 1/2 cup oil
  • 4 large eggs
  • 1 cup yogurt
What you do:
Dump all of the ingredients in a bowl and mix well.

Fill 24 cupcake liners 2/3 full and bake as directed on cake mix box.
Allow to cool.

Vanilla Filling
What you need:
  • 1/2 cup room temperature butter
  • 1  1/2 cups powdered sugar
  • 6 tablespoons marshmallow fluff
  • 1 teaspoon milk
  • 1 teaspoon vanilla extract
  • pinch of salt
What you do:
Beat all filling ingredients in a bowl.

Using an icing bag and round tip. Fill each cupcake with vanilla filling.

Chocolate Buttercream Icing
What you need:
  • 6 tablespoons room temperature butter
  • 2  2/3 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup milk
  • 1  1/2 teaspoons vanilla
What you do:
Beat all icing ingredients in a bowl.

Using an icing bag and tip, ice each cupcake.

Happy Birthday Bestie!
