Trouble sampled one straight out of the oven and thought it was "delicious... and hot."
What you need:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup shredded apples (I used granny smith)
1 cup chopped apples
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
What you do:
Preheat oven to 375 degrees.
In a bowl, mix flour, baking powder, baking soda and salt.
In a large bowl, beat butter, sugar and eggs.
Mix in vanilla, apples, cinnamon and nutmeg.
Fold in the flour mixture.
In a small bowl mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs.
Spoon the apple muffin mixture into 12 greased or lined muffin pans. Then sprinkle topping over tops of apple mixture in muffin pan.
Bake 20 minutes in preheated oven or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan.
I'm hoping these muffins make it to school.
I may have to resort to hiding them.
