Roasted Broccoli

Mr.Perfect happens to have a green thumb... unlike me. He started a winter garden this year. We are growing cabbage, onions, and broccoli.

I harvested some broccoli today and thought I'd cook it my favorite way. You guessed it... roasted! Maybe I should seek help with my roasting addiction?

What you need:
  • 1 pound broccoli
  • 2 tablespoons olive oil 
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon freshly ground black pepper 
  • 1/8 cup ritz cracker crumbs 
  • 1/4 cup finely grated Parmesan
What you do:
  1. Preheat oven to 425 degrees.
  2. Cut the broccoli florets into bite size pieces. (Don't waste the stalk! Peel and slice it.)
  3. Put the broccoli in a mixing bowl and combine with olive oil, salt, pepper and cracker crumbs.
  4. Spread the mixture on a foil lined cookie sheet and put in the oven. Roast until the broccoli is tender, 8 to 10 minutes. 
  5. Remove from the oven. Add cheese and serve immediately.
 It's so good, even Trouble likes it!

Beauty and Bedlam


  1. I've never had it this way, with the cracker crumbs. I will definitely try it. Grandma used to steam broccoli or cauliflower and then she would make a crunchy topping by melting butter, browning bread crumbs and then adding parmesan. It was fantastic. I haven't thought of that in years, but your recipe reminded me of it. And also, completely jealous of the winter garden.

  3. I have tried and tried to grow broccoli, but to no avail. I am having my soil test by our cooperative extentsion service this week to see there is something out ob balance there. I am not a huge broccoli fan, but my kids just love it. This sounds good though and if I can ever get any to grow I will be trying it.

  4. This is an absolute favorite in my home, even with my 2 yr old - I do use 3-4 garlic cloves slivered and roasted along with the broccoli - Nice post :)

  6. LOL, I'm just like you. I love my veggies roasted! :) At least, we're eating veggies and healthy. hehehe...

    How lucky you've got a vegetable garden! Very envy. The most I've grown so far are herbs. Can't wait to try growing veggies though.
