Bakin' Bacon

It's a cold & rainy Sunday that just screams baked potato soup. But before I can start the soup I need to make some bacon. I love to eat bacon but I'm not a fan of frying bacon. It's messy, time consuming, and I somehow always get burned.

Then I discovered I could bake it in the oven and hot dog, that was a happy day! Nana got me this baking sheet and rack at Crate&Barrel that works perfectly for cooking bacon in the oven.

First I lined the baking sheet with foil for easy clean up. My second mom in High School, Mrs.G, would line her pans in foil. At the time I failed to appreciate her easy clean-up trick but now I completely get it.

I placed the bacon strips on the rack. See how nicely the grease will drip down onto the foil.

 Don't preheat the oven! I just slide the pan into a cold oven and close the door. I turn the oven on and set it to 400°F. I set the timer for about 18 minutes and then... take the dog out so she won't potty in the house or make biscuits or fold some laundry or empty the dishwasher or whatever... you get the picture. It's way easier than standing in front of the stove the whole time flipping bacon as the grease burns your hands.
Watch the bacon toward the end of the cooking time as you may like your bacon more or less crispy. Cooking time may vary from 18 to 28 minutes depending on the thickness of the bacon. Mr.Perfect & Trouble like their bacon very crispy. I just like bacon!
